First, let’s understand what PUFAs are. All fats are a chain of carbon atoms linked to hydrogen atoms, but the difference between them all is the form and length of the carbon chain, as well as the number of hydrogen atoms connected to the carbon ones. PUFAs have two or more double bonds in their carbon chain, and this all depends on what type of PUFA it is, such as omega 3, or 6

Now, unlike saturated fats, they have less hydrogen atoms surrounding their carbon ones, which is why they are less stable to heat and light, and it begs the question, how is that any different to when the oil in itself is entering our ridiculously hot body and hitting our extremely acidic stomach?

This is why reaching for PUFAs such as corn oil, soy oil, vegetable oil, fish oil, can lead to things such as oxidation in the body and cause oxidative stress. This type of stress can show up in the body in many ways that can lead to some severe hormonal imbalances

1. it can cause cell inability to breakdown glucose and use it for energy, which is VITAL for our cells to even function

2. high PUFA consumption has been linked to unbalancing our vitamin E levels, which is an antioxidant that particularly is made to protect our cells from free radicals, reducing the aging process, and work synergistically with nutrients such as zinc, vitamin A and C- all in which are important for immunity, hormone health and reducing inflammation. Metabolic syndrome is a result of this, which is when one’s tissues refuse to absorb lipids because they are already ‘full’ of it, hence rejecting vitamin E

3. a vitamin E deficiency can also lead to estrogen dominance (which shows up as heavy bleeding, cramping, PMS) and low progesterone levels. Some theories express that PUFAs are estrogenic, and act similarly

Now, does this mean that all omega 3 and 6 foods are bad? No, no, and no.

The meaning of this post is to express how the isolation of nutrients and the immense processing of oils can lead to poor health. PUFAs are required in diet, but by extracting ONLY omega 3 from a food, leaves these fats susceptible to oxidation, and us in danger.
